You know, I agree their relationship has changed, but I'm not sure it's evolved much. When I stopped watching-- and that was mid-S3-- the dynamic Rachel outlines was...still pretty much in place. With a side note of blaming Sam for pretty much everything wrong in the universe, kind of literally.
