Didn't the cannibals have some kind of tragic backstory where they were children who had been driven out/left for dead who grew up feral and had to eat travelers to survive? (Which, given that you can't base a diet around random travelers unless you're camping out on the 405, makes as much sense as 'rapid spread of a lethal mutation,' but there you go.)
