Since I was coming to the comments to mention the Coventry Carol, I'll jump into this thread. I really love Alison Moyet's version of the Coventry Carol, after imprinting on it as a teen from one of the big Christmas charity albums. There's an arrangement I haven't heard before from the 2019 King's College Choir if you like ethereal boys' voices. And here's a more traditional rendition from the Collegium Vocale Gent. And there's always Loreena McKennitt.
